Our Chef de Cuisine

We proudly present our Chef de Cuisine Tobias Schmalzl

Born in 1968 in Bressanone (South Tyrol) he collaborated with star acclaimed chefs such as Hans Haas, Dieter Müller and Heinz Winkler. In Sardinia he discovered and fell in love with Mediterranean cuisine. Author of the cookery book “Südtirol Küche – raffiniert einfach” he has passionately managed the kitchen at Cavallino Bianco since 2006.

As always, at Cavallino Bianco the success is the fruit of team work and in our kitchen this is in the form of the duo Tobias Schmalzl – Nico Pretin, exceptional Deputy Chef de Cuisine.

Born in Chioggia in 1968, he transformed his passion for cooking into a true profession by working in large hotel structures in the Venetian territory. During his experience in Padova he met some of the top people in cuisine and with them formed a close team in search of techniques, flavours and innovation. He boarded the kitchen at Cavallino in 2006 following stimulating experiences abroad including the Caribbean and Germany.
